Instead of gills, they have tiny tooth-like spines under the cap - their hedgehog namesake. Excellent edible with sweet, nutty flavor similar to chanterelles. No dangerous lookalikes, making them safe for beginning foragers. Their flesh is firm and does not easily break. Found in similar habitats as chanterelles. Often called sweet tooth in English.
