About the Pigs Ear

Gomphus clavatus, a purple tinged funnel that folds like an ear. Prized for centuries in northern Europe, especially pickled. Fruitings have declined sharply and it is now protected in several countries. Young violet caps are the choice stage. Grows in partnership with spruce roots.
