About the Enoki

The cultivated version is long, white, and thin - grown in the dark to prevent coloring. The wild version looks completely different - short, brown, and robust. They are the same species (Flammulina velutipes). Popular in Japanese hot pot dishes. One of the most cultivated mushrooms in Asia. They can actually move - their mycelium can crawl at 1mm per hour.
