About the Hen of the Woods
Also called Maitake in Japanese (dancing mushroom). Can grow to massive sizes - specimens over 45 kg have been recorded. They grow at the base of oak trees, looking like a nesting hen. Studied for immune-modulating properties. The Japanese name comes from people dancing with joy when finding them. Excellent culinary mushroom with rich, earthy flavor.
