About the Chanterelle
One of the most prized edible mushrooms worldwide. Their apricot-like aroma is unique. They form mycorrhizal relationships with trees and cannot be commercially cultivated. A single patch can produce for decades if harvested correctly. They contain high levels of vitamin D (5x more than salmon by weight). France is the largest consumer. Their golden color makes them easy to identify.
