Simply a young portobello - same species (Agaricus bisporus) at an intermediate age between white button and portobello. Brown variety of the common cultivated mushroom. More flavorful than white buttons but less intense than portobellos. The marketing distinction is entirely about harvest timing. Rich in selenium and B vitamins.
