About the Portobello
Actually just an overgrown cremini mushroom - all three (button, cremini, portobello) are the same species at different ages. The mushroom industry deliberately markets them as different products. They are Agaricus bisporus. When left to grow, the cap opens to reveal dark gills - this is a portobello. The largest commercially cultivated mushroom.
