About the Parasol
Macrolepiota procera, a magnificent scaly cap on a snakeskin stem with a sliding double ring. Caps pass 30 cm across and are fried like schnitzel. Young caps dipped in egg and breadcrumbs are a classic European dish. In warm regions beware the green spored Chlorophyllum, a dangerous lookalike; the true parasol leaves a white spore print.
