About the Birch Bolete
Leccinum scabrum, the classic birch partner with a scab covered stem. Gray black scabers darken with age. Must be cooked thoroughly, as undercooked Leccinum cause vomiting. A staple sliced and dried in Scandinavia and Russia. Some orange capped relatives stain blue black and upset stomachs.
