About the Penny Bun
The archetypal toadstool shape - thick white stem, rounded brown cap. Also called cep or porcini. The cap resembles a penny bun (bread roll), hence the name. Prized across European cuisine for centuries. Their underside has a spongy pore surface instead of gills. They are the bolete most people picture when they hear the word mushroom.
