About the Truffle (Black Perigord)

The most expensive food in the world by weight - $800-1,500 per kg. They grow underground in symbiosis with tree roots, detected by trained dogs or pigs. France produces 30-40 tons annually, down from 1,000+ tons in the 19th century. Their aroma is caused by androstenone, also found in boar saliva. Cultivation is possible but difficult. Truffle hunting is a guarded family tradition.
